These are a species of domesticated buffalo which inhabit Settler's Field in the Amazon rainforest.

The buffalo appear in the Amazon river, observing the python. In Disneyland's Jungle Cruise, Nigel Greenwater mentions Settler's Field being flooded by rains brought by Schweitzer Falls causing the buffalo to be attracted to the region.

The real-world reason for this is that since the top of the Enchanted Tiki Room is visible from Disneyland's Adventureland, the sculpts visible from Adventureland can be interpreted as wooden carvings of longhorn steer.[1]
